Chocolaty Cacao Baked Doughnuts with Strawberry Raspberry Frosting

These are by far one of the tastiest vegan doughnuts I’ve ever had! It honestly reminds me of the strawberry frosted donuts I would crave for as a kid from DD.
With coconut butter as a superfood for the frosting & a good chocolate doughnut, you can’t go wrong with this healthy treat.

{Makes 6 Doughnuts}


INSTRUCTIONS:

  1. For the doughnuts —
    1.) Begin by preheating the oven to 350. Mix all dry ingredients together into a large bowl.
    2.) Then, begin mixing your wet ingredients into the same bowl. If the dough is too thick, add a splash more of almond milk if needed to think out as you want the mixture to be pourable, but still have a thick-like consistency.
    3.) Pour mixture into a greased doughnut pan and bake for about 10-12 minutes.
    4.) Let cool for 5-10 minutes then top with frosting.

    For the frosting —
    1.) Start by washing the fruit and then cutting off the tops of the strawberries.
    2.) Then, blend your strawberries and raspberries in a blender.
    3.) Heat up coconut butter/manna in the microwave for about 30 seconds (or until melted) and then pour into blender.
    4.) Then add maple syrup and unsweetened almond milk to the blender. Continue to add in dashes of milk until it thins out the consistency (if needed).
    5.) Pour frosting mixture into a small bowl. Dunk doughnuts into frosting after a few minutes and then top with additional raspberries or finish with a drizzle of melted dark chocolate.

INGREDIENTS:

  • Doughnut Mixture —
    1 cup oat flour
    1/2 cup cacao powder
    1/4 cup coconut sugar
    1 tsp baking powder
    1/2 tsp baking soda
    2 tbsp unsalted raw almond butter
    1/4 cup pure maple syrup
    1 tsp vanilla extract
    1/2 cup almond milk
    1 tsp apple cider vinegar

  • Strawberry Raspberry Frosting —
    1/2 cup fresh raspberries
    1/2 cup fresh strawberries
    3 tbsp coconut butter/manna
    3 tbsp unsweetened almond milk
    1 tbsp pure maple syrup
