Crumbly Chickpea Cookie Dough

{Makes about 2-3 servings}


INSTRUCTIONS:

1.) Rinse chickpeas in a colander/strainer.

2.) Add all ingredients except for chocolate chips to a food processor or blender.

3.) Give a quick taste test before emptying to see if you would like it a little more sweet. If this is the case, add a little bit more maple syrup.

4.) Next, fold in vegan chocolate chips throughout the mixture.

5.) Once you’re ready to eat, you can either eat it raw or place it into a microwave-safe bowl/mug for 2-3 minutes. Make sure not to fill up your container all the way with the cookie dough because it will rise.

6.) Let cool for a couple of minutes before eating. Enjoy!

INGREDIENTS:

  • 1 can rinsed chickpeas/garbanzo beans

  • 3 tbsp almond flour

  • 1/4 cup plant-based milk

  • 1/2 cup vegan chocolate chips (I used @enjoylifefoods)

  • 2 tbsp pure maple syrup

  • 1 tsp vanilla extract

  • Pinch of Himalayan salt
