Apple & Cabbage Slaw With Air Fried Herbed Salmon

Prep Time: 20 minutes | Cook Time: 10-12 minutes | {Makes about 4 servings}


INSTRUCTIONS:

  1. In a medium bowl, whisk together the olive oil, vinegar, honey, salt, and pepper.

  2. Spiralize the green cabbage, purple cabbage, and green apple then transfer them to a large bowl.

  3. Pour dressing over slaw and stir to combine. Chill in the refrigerator until ready to serve.

  4. Preheat the air fryer to 400°F.

  5. Rub each filet with olive oil and season with garlic powder, salt, lemon juice, parsley flakes, and Italian seasoning.

  6. Place salmon in the air fryer and air fry for about 10-12 minutes, depending on the thickness of the salmon. Please note, time may vary between air fryers.

  7. Open the basket and check for the desired doneness with a fork.

  8. Remove filets from the air fryer and allow them to cool down for 1 minute.

  9. Serve with slaw and additional toppings (optional).

  10. Enjoy!

INGREDIENTS:

For the Slaw:

  • 2 tablespoons olive oil

  • 2 tablespoons balsamic vinegar

  • 1 teaspoon of apple cider vinegar

  • 1 teaspoon local honey (optional)

  • Sea salt, to taste

  • ½ head green cabbage

  • ½ head purple cabbage

  • 1/4 cup of shredded carrots

  • 1 green apple

  • 1 cup spinach and kale mix

For the Air-Fried Salmon:

  • 4 wild-caught salmon filets

  • 2 tablespoons olive oil

  • 2 teaspoons garlic powder

  • 1 teaspoon salt (I use Himalayan sea salt)

  • 1 teaspoon lemon juice

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon parsley flakes

Additional Toppings:

  • Raw walnut pieces and unsweetened dried cranberries
