Chocolate Zucchini Cauliflower Oats

Enjoy sneakily adding some vegetables to your morning oatmeal with this delicious recipe!


INGREDIENTS:

  • 1/2 cup quick oats (I love Bob’s Red Mill quick-cooking GF oats)

  • 1 tbsp flaxseed meal

  • 1 tsp chia seeds

  • 1 tbsp cacao or cocoa powder (I use cacao from nautrics)

  • 1/2 cup grated zucchini

  • 1/2 cup riced cauliflower

  • 1 ripe, mashed banana

  • 1 cup water or non-dairy milk

INSTRUCTIONS:

  1. In a saucepan, mix together the oats, flaxseed meal, chia seeds, and cacao/cocoa powder.

  2. Add in your prepared zucchini, riced cauliflower, mashed banana, and 1 cup of liquid to start. Stir well.

  3. Bring everything to a boil and stir occasionally to keep things from sticking to the bottom of the pan.

  4. The flaxseed meal and chia seeds will help you get thick oatmeal fairly quickly, so feel free to add more liquid if needed to get your desired texture.

  5. Continue to cook the mixture until it reaches your desired thickness.

  6. Pour everything into a bowl and top with whatever toppings you like! I chose blueberries, raw sunflower seeds, blackberries, bee pollen, and hemp seeds.

  7. MICROWAVE OPTION: If you would like to cook your oats in a microwave, start by mixing all of the dry ingredients together in a bowl. Then add in the vegetables, mashed banana, and liquid and mix again until a uniform mixture forms. Microwave on high for 1 minute. Stir the oats and then continue to microwave for 20-30 second intervals, watching closely, until the oats reach your desired thickness.
